So, what was the fix? I have been following this because my system restore is borked as well.

Use Acronis True Image 2011 to backup my system and turn off System Restore.
I use W7 Backup for full daily Backups to a internal HD. I also use Macrium Reflect (which is free) for Weekly full backups to an entirely different HD than the one I use for my W7 backup
It has worked for me. But I will not disagree with yrag. By the time I got half through readinf his comments tears were running down my face and I couldn't see the screen anymore!
Oh.. and here I was thinking it because they thought they were made from potatoes.
